Who says that breakfast has to be loaded with calories? Try this recipe for Banana Pancakes!
Makes three servings, two small pancakes each.
Adapted from THIS.
1/2 cup whole wheat flour
1 tsp baking powder
A pinch of salt
1/4 tsp cinnamon
1/3 ripe banana, mashed
1/3 banana, sliced
1/2 cup soymilk
1 egg white
1 tsp coconut oil
1 tsp vanilla extract
2 tsp agave
Mix dry ingredients in one bowl, and wet ingredients (including mashed banana!) in another bowl. Combine and mix until there are no dry spots and the mixture is fairly smooth. It will be a little lumpy, though!
Make pancakes. If using these measurements, it should make 6 small pancakes, or 3 large ones. Use a low-cal cooking spray.
Fry bananas in cooking spray for a few seconds and place on top of pancakes. Sprinkle with cinnamon and enjoy!
